Some sugar cookies I made for some friends today. I just topped them with chocolate coating and some sprinkles.

i cooked this just half an hour ago ...

CHICKEN MACARONI SOUP - i used left over chicken rotisserie meat to make the soup with shallots, carrots, celery hearts, ground pepper, a little nutmeg, and just added evaporated milk.






CORN MUFFINS

from all-purpose flour, cornmeal, baking powder, sugar, salt, sour cream, corn oil and cream style corn. this would go well with clam chowder but i don't have clams laugh.gif so i just made the chicken macaroni soup to go with these muffins. smile.gif






and this is OLD FASHIONED CHOCOLATE CAKE - (eggless)

cake is made from all-purpose flour, sugar, unsweetened coco powder, salt, hot water, vegetable oil, distilled vinegar, coffee granules and vanilla extract
frosting is from unsalted butter, unsweetened coco powder, salt, sour cream, heavy cream, coffee granules and vanilla extract. it is rich and moist and a tall glass of cold milk is a great combination with a slice of this sinful treat laugh.gif

sorry for the late response ...... here goes..

you will need

1 cup cream of mushroom soup
2 cups of half and half
1/2 cup sliced shiitake mushrooms (soak in hot water till they're tender then drain)
shallots chopped
2 cloves garlic, minced
ground pepper
1/8 tsp nutmeg
1 cup seafood mix
2 tablespoons butter
1 cup grated parmesan cheese


directions


pasta

cook according to package instructions - save some of the pasta water in case sauce becomes too thick

sauce

in a nonstick sauce pan, saute shallots in butter till transluscent. add the seafood mix, a little salt and pepper and cook till shrimps are pink then remove from pan and set aside.

in the same sauce pan, add a little more butter and saute the garlic, don't burn it. add the shiitake mushrooms, nutmeg and more ground pepper. let it cook in its juice before adding the cream of mushroom soup then the half and half. let simmer but stir it constantly till bubbly. add the grated parmesan cheese and taste if it needs more salt or pepper. add the seafood mix and continue stirring till all the ingredients are mixed together. pour over cooked pasta.

note: if the sauce becomes too thick, you can loosen it with the pasta water

a couple cloves of toasted then crushed garlic or maybe toasted bacon makes it more delicious smile.gif

CHUCK STEAK IN RED WINE SAUCE

chuck steak seasoned wih salt and pepper and a little soy sauce browned in olive oil and a little butter and garlic then slow cooked in red wine served with fried red potatoes and cherry tomatoes

Omg I love food.
These are random pictures of food I cooked/made/whatever back in march.



hijiki rice with teriyaki chicken. (I think i added too much sake)


I forgot the name of this dish..but its got noodles, ham, egg, and cucumbers. Served it with a mirin/sugar/soy sauce/sesame oil/water dressing. sounds weird, but its really good! esp on hot days.


Some random chicken i made that was butter/garlic/oregano based. LOL fattening, but yummy. (yes i ate it with chopsticks)

THICK AND CREAMY NEW ENGLAND CLAM CHOWDER

made from canned chopped clams, clam juice, shallots, cream of celery soup, half and half, heavy cream, butter, ground pepper and toasted bacon



DEEP-FRIED WHITING FILLETS
sliced whiting fillets seasoned with salt and pepper then dredged with cornmeal and deep fried- served with tartar sauce

Ingredients


6-7 pieces bacon, cut into small pieces
1 medium onion, chopped
2 (5 ounce) cans baby clams, with juice reserved
6-7 potatoes, cubed
2 (10 1/2 ounce) cans cream of celery soup
1 cup heavy cream
1 cup milk
1 tablespoon butter
1 teaspoon dried dill weed

Directions:

Add bacon to sauce pan and cook on medium low heat until crispy.
Add onion and cook until translucent.
Add clam juice from both cans.
Add potatoes.
Cook and cover until potatoes are fork tender, about 10-15 minutes.
Stir occasionally so potatoes won't stick.
Add clams, soup, cream, milk, and dill weed.
Stir together.
Add butter and let melt into the chowder.
Cook for about 30 minutes or until thickened.
Stir occasionally.

and this is what i did to the rest of the whiting fillets.

BAKED WHITING FILLETS

seasoned the fillets with salt and cracked pepper, drizzled olive oil and oven baked with cherry tomatoes, scallions, lemon and tarragon






i also baked white chocolate chip-macadamia cookies and angel food cake which i'll top with fresh fruits at our pot luck at work tomorrow smile.gif
