Ingredients
1 cup half-and-half
3 large eggs

Over medium-low heat, melt 1 tablespoon of butter in a 10-inch nonstick saute pan. Place 2 slices of bread at a time into the pan and cook until golden brown, approximately 2 to 3 minutes per side. Remove from pan and place on rack in oven for 5 minutes. Repeat with all 8 slices. Serve immediately with maple syrup, whipped cream or fruit.

But what's half and half? half of one milk and another half of a different kind? Where can I buy the bread? I don't think safeway has that kind of bread. And my last question is if I buy the bread 8 days before, do I just leave it out instead of putting it in the fridge which is what I normally do? What do I do if I buy the bread not within the 8 days' time for it to get stale?

I'm also planning on making my mom a cake with fruits on it. I'm going to cheat and use a mix though- vanilla flavored. Will it be okay if I just use whip cream for the frosting or would that taste weird because I was thinking about having the inside whipped cream and mandarin oranges and I was planning on putting some on the top for decoration. Do I need to rinse the mandarin oranges or can I just use it straight out of the can? Whenever my mom uses canned foods, she always rinses it out of the water its in.

Half and half is a mixture of milk and cream and it's sold in grocery stores so I'm sure you'll be able to purchase it. And, the bread can be bought at the grocery store or a local bakery. And, I think 8 days would be too long so I suggest you buy it a few days before Mother's Day...and the bread doesn't have to be super stale or anything...just make sure it's not freshly baked...if the bread is slightly hard, it'll be okay.

For the mother's day cake, I think you should use heavy cream and sugar to make whipped cream because it's fresh that way and it's much better. And mandarin oranges from a can do not need to be washed...just make sure that it's properly drained or else your cake might be runny after a while. Goood lucckkk!

So, today I made strawberry cake with vanilla bean ice cream and a strawberry on the side smile.gif

This is the recipe I use:

6 oz mascarpone cheese (I like using the Bel Gioioso brand. Most of the HEBs carry it in their deli area.)
2/3 cup whipping cream
1/2 cup sugar

2 1/2 cups espresso (I use instant if I can't get a good brew.)
1 package of lady fingers

Zabagilone
2 tablespoons whipping cream
1/4 cup chocolate chunks
4 large egg yolks
1/3 cup sugar
1/4 cup dry rum
pinch salt

1. Beat whipping cream and sugar until peaks form. Fold mascarpone in gently. Do NOT whip the mascarpone; it will liquefy your whipped cream. Set aside.
2. Add whipping cream and chocolate to a double broiler over medium heat. You can use the microwave also. Heat for 45 seconds at a time in a microwave safe bowl and stir after each period.
3. Whisk egg yolks, sugar, rum, salt until it is thick. Then, continue to whisk the mixture in a double broiler or a mixing bowl over a pot of boiling water. Do NOT let the water touch the bowl or get inside of it. You don't want to scramble your eggs. It should be smooth and custard-like.
4. Fold melted chocolate into egg mix. Then fold into mascarpone mix.
5. Dip ladyfingers into espresso and break in half to put into cupcakes liners. Spoon filling on top, and garnish however you like with fruits and chocolate. I sometimes drizzle more espresso on top.
6. Refrigerate before you enjoy. biggrin.gif

That's really funny because a friend told me that the picture of the close-up looks like he has Down's syndrome-- not that Down's syndrome is a laughing matter, but the cupcakes are rather goofy looking. laugh.gif

Stale bread basically means bread that's been sitting out for a while. Just give fresh bread a few days to just sit in the kitchen and it should be ready to go!

I used this as a basic recipe from All Recipes but tweaked it a bit.

INGREDIENTS
10 tablespoons butter, room temperature
3/4 cup white sugar
3 eggs
1 teaspoon strawberry extract
1 3/4 cups self-rising flour
1/4 teaspoon salt
1/4 cup finely chopped fresh strawberries, drained

DIRECTIONS
Preheat the oven to 325 degrees F (165 degrees C). Grease 12 cupcake pan cups or line with paper liners.
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the strawberry extract. Combine the self-rising flour and salt; stir into the batter just until blended. Fold in strawberries last. Spoon the batter into the prepared cups, dividing evenly.
Bake in the preheated oven until the tops spring back when lightly pressed, 20 to 25 minutes. Cool in the pan set over a wire rack. When cool, arrange the cupcakes on a serving platter. Frost with desired frosting.

Instead of the 10 tablespoons, I used six. 1/4 cup white sugar and 1/2 cup brown sugar, 2 eggs, 1 teaspoon vanilla extract, 1/2 cup fresh strawberries (which I did not drain), 1 3/4 cups all purpose flour, 1/3 cup whole milk, 1 1/2 tsp baking powder, 1/2 tsp baking soda, and 1/4 tsp salt...and to make it more strawberry looking, I added red food coloring. Also, I topped it off with homemade cream cheese frosting with strawberries which basically consists of a 8 oz package of cream cheese (that's softened), 1/4 cup butter (softened as well), 1 cup of confectioners sugar, 1/2 tsp vanilla extract, and strawberries that I finely diced. Also, I made it into a cake rather than a cupcake...anyways, hope this helped!

two types of noodles with tofu, fish balls, chinese sausage, pork, green beans, carrots and celery




RICE CAKE WITH CARAMEL CUSTARD TOPPING


sweet rice steamed first then cooked with butter, brown sugar and coconut milk then spread in a baking tray brushed with custard mix and baked till goldern brown






SALPICON- spicy Mexican Beef Salad
diced tomatoes, red radishes, avocados, monterey jack cheese and cilantro served on top of tostadas
chuck roast slow cooked in beef broth, garlic, onion, bay leaves, chipotle, salt and pepper
dressing is meat broth, olive oil, catsup, chipotle peppers, shalots, garlic, white vinegar, salt and pepper








i know i owe someone a recipe but i'm just sooo sleepy..... too much excitement tonight smile.gif i'll post recipe of mascarpone cupcakes tomorrow:)

here's the recipe

MASCARPONE-STRAWBERRY CUPCAKES


INGREDIENTS:

CUPCAKES
• 3 cups all-purpose flour
• 2 teaspoons baking powder
• ½ teaspoon baking soda
• ¼ teaspoon salt
• 1 cup mascarpone cheese softened
• 1 cup butter, softened
• 1 3/4cups sugar
• 3 eggs
• 1 ¼ cups whole milk
• 1 teaspoon vanilla extract

GLAZE

• 1 cup water
• 1/3 cup frozen strawberries, thawed and drained
• 2 1/2 cups powdered sugar

DIRECTIONS

1. Preheat the oven to 350°F. Prepare cupcake tins as directed as directed in the recipe you are following.
2. Sift the flour, baking powder, baking soda and salt together in a medium bowl.
3. In a separate, larger bowl, cream butter. Gradually add the sugar, creaming until light and fluffy.
4. Add the eggs one at a time, and beat well after each addition.
5. In a small bowl, combine the milk, mascarpone cheese and vanilla.
6. To the butter mixture, add about one quarter of the flour mixture and mix well. Add about one quarter of the mascarpone mixture and mix well. Continue alternating the flour mixture and mascarpone mixture, beating after each addition until smooth.
7. Pour the batter into the cupcake tins. Bake for 15 to 20 minutes, until the cake springs back when touched.
8. Remove from oven and let cool for about 10 minutes, then turn the cupcakes out of the tins and onto a rack to finish cooling completely.

Meanwhile, puree the strawberries in a blender or small food processor. Place the powdered sugar in a medium bowl. Pour in the strawberry puree and whisk until smooth. Top the cooled cupcakes with the strawberry glaze. Let the cupcakes sit for a few minutes for the glaze to firm up, then serve.


CHOCOLATE CRINKLES

all-purpose flour, baking powder, butter, eggs, vanilla, semi-sweet chocolate, granulated sugar and confectioner's sugar
