What's a substitute for heavy whipping cream and heavy cream or how can I make them? I need it for the filling for cream puffs. Does anyone have any good cream puff or profiterole recipes? I can't really find any good ones so if you have one, I would be really happy biggrin.gif

edit: I found another recipe for filling at about.com but does it sound edible?

# Filling

here's another custard filling recipe for your consideration. i substituted heavy cream with half and half. i use this as filling for my cream puffs or fruit sponge cakes

1-1/4 cups half-and-half
1/3 cup granulated sugar
1 tablespoon plus 2 teaspoons cornstarch
a pinch of salt
2 large egg yolks
1 teaspoons pure vanilla extract

in a medium saucepan over medium-high heat, whisk the half-and-half, the 1/3 cup of sugar, the cornstarch and a pinch of salt until it comes to a boil. In a medium bowl, whisk 2 egg yolks, then slowly whisk in half of the hot mixture. pour the custard back into the pan and cook, whisking, until it comes to a boil. transfer to a bowl and stir in 1 teaspoon of the vanilla. cover with wax paper and refrigerate for 1 hour before using. adjust the quantity of the ingredients if you need more filling

oops.... i forgot the cream puff recipe

CREAM PUFFS WITH CUSTARD FILLING

Pastry -

250 ml (1 cup) water
150 gm (1/2 cup) butter or margarine
125 gm (1 cup) unbleached flour or bread flour
4 large eggs
1/2 tsp salt (reduce or omit if using salted butter or margarine)


Directions -


1) Heat water, salt and butter to a rolling boil; reduce heat. Tip in the flour and stir vigorously over low heat until mixture forms into a ball, about 1 minute.

2) Remove from heat. Add in the eggs, one at a time, while beating until dough mixture is smooth.

3) Heat oven to 200 degrees Celcius or 400 degrees Fahrenheit.

4) Use rounded teaspoonfuls (to tablespoonfuls, depending on the size you like) or a piping bag to make mounds of dough set about 2 inches apart on an ungreased cookie sheet.

5) Bake puffs until they are puffed and golden brown, 20 to 30 minutes. Cool.

6) Slit each puff halfway and put in the custard filling (recipe above)

I baked tarts last night for the first time, but my sister took the camera for the day so I couldn't get a picture! I got the recipe from this thread and they were REALLY good - it makes me feel like I have a bit of cooking/baking talent.
Everyone's food looks soooooo good.

Also, question/resquest: Does anyone have a good recipe for some simple chocolate chip cookies?

you're welcome! yes you can, just keep it refrigerated and it can last for days.

i used ground beef cooked with mexican seasonings served on top of corn tortillas and hard shells with chopped romaine hearts, tomatoes, mixed grated cheeses, spicy salsa and squirt of lemon

JJM, your BF is well fed! That bourbon steak with mushrooms looks delicious.

These are very simple, but they're the best cupcakes I've ever made, better than the Magnolia Bakery recipe. The crumb size is absolutely perfect, and the frosting is light and silky like whipped cream, and not too sweet. Yellow cupcakes with vanilla frosting:

because all you need is chocolate and strawberries.

i wish i would have decorated it better.
but i couldn't control the drizzling part. );

i don't have a name for this dish so let me call it PORK WHATCHAMACALLIT

lean pork seasoned with salt, hungarian paprika, ground pepper, a little soy sauce, a little white vinegar, chili flakes- browned on all sides then added chopped onion and garlic, added water then simmer till tender and sauce becomes thick. i also added red-skinned potatoes, red bell pepper strips and green peas. served with steamed rice..... my cousin's in heaven again laugh.gif

Those are cute smile.gif Jeez when you buy chocolate covered strawberries elsewhere (like Godiva) its soo expensive! proably cuz of the chocolates..but homemade tastes just as great biggrin.gif
