more BRICK TOASTS!

i added coconut flakes on coconut cream and condensed milk giving it more macaroon-like taste. yummy.....
toasted on the side and moist in the middle is how we want our brick toasts smile.gif




with sliced almonds for crunch

Here is a double tomato bruschetta made for my mom and a chicago style deep dish pizza with pepperoni and bacon for my boyfriend. :]

i cooked jahp chae for lunch

i used chicken, shiitake mushrooms, carrots, cellophane noodles, and spinach-
not in the picture are the sesame oil, canola oil, kikkoman soy sauce, onion, garlic salt, a sachet of equal,
sesame seeds and chicken broth for the noodles





i also baked peach cobbler

i used canned sliced peaches which i drained and cooked in butter, brown sugar, nutmeg and cinnamon and thickened with bread crumbs
for the biscuit dough topping, i used bisquick flour, baking powder, milk, butter, oatmeal, sugar and salt

on a tray first (this is for my aunt who's been bugging me for this dessert for the longest smile.gif )

Cooked some southern comfort food a couple of days ago.



Smothered Chicken with Green Beans and Mash Potatoes


Seafood Gumbo (loaded with Anduoille sausages, shrimp, tilapia, chicken, crawfish)

Grilled this today.

I know recipe Caramel Chocolate.
"Chocolate cookie dough is wrapped around caramel filled chocolate candies. We have these at Christmas time each year. They are delicious! Hope you enjoy them too."

INGREDIENTS (Nutrition)

* 1 cup butter, softened
* 1 cup white sugar
* 1 cup packed brown sugar
* 2 eggs
* 2 teaspoons vanilla extract
* 2 1/4 cups all-purpose flour
* 1 teaspoon baking soda
* 3/4 cup unsweetened cocoa powder
* 1 cup chopped walnuts
* 1 tablespoon white sugar
* 48 chocolate-covered caramel candies
DIRECTIONS

1. Beat butter until creamy. Gradually beat in white sugar and brown sugar. Beat in eggs and vanilla. Combine flour, baking soda, and cocoa. Gradually add to butter mixture, beating well. Stir in 1/2 cup walnuts. Cover and chill at least 2 hours.
2. Preheat oven to 375 degrees F (190 degrees C).
3. Combine remaining 1/2 cup nuts with the 1 tablespoon sugar. Divide the dough into 4 parts. Work with one part at a time, leaving the remainder in the refrigerator until needed. Divide each part into 12 pieces. Quickly press each piece of dough around a chocolate covered caramel. Roll into a ball. Dip the tops into the sugar mixture. Place sugar side up, 2 inches apart on greased baking sheets.
4. Bake for 8 minutes in the preheated oven. Let cool for 3 to 4 minutes on the baking sheets before removing to wire racks to cool completely.

it's so easy smile.gif you can actually find it in the Jello box but here it is anyway...

1 1/2 cups boiling water
i pkg (3 ox ) lime-flavored Jell-O brand gelatin
1 tub (8 oz ) Cool Whip topping, frozen or thawed

Add boiling water to gelatin; mix in large bowl; stir for two min. until completely dissolved.
Whisk in Cool Whip until blended. Refrigerate 8 hours or until firm.

pineapple and coconut cupcakes

i used all-purpose flour, baking powder, baking soda, eggs, sugar, unsalted butter, crushed pineapple and pineapple juice for the cupcakes
butter, cream cheese and confectioner's sugar for frosting and toasted coconut for toppings
