OOOH This is the first time I took pictures of food I made so I guess I will post them up!

Basically I made a 2-layer chocolate cake for my friend's birthday:

OH, and in case you were wondering why I used green (because it doesn't really match with the rest of the cake), it's because it's her favorite color that we always joke about it since i really dislike green haha (yes I know, how can I dislike something that's practically everywhere..). If I wanted it to match, I would've used brown or dark red (to match the strawberries).

Well, here's the recipe from Allrecipes.com:

INGREDIENTS

* 1 (18.25 ounce) package devil's food cake mix
* 1 (5.9 ounce) package instant chocolate pudding mix
* 1 cup sour cream
* 1 cup vegetable oil
* 4 eggs
* 1/2 cup warm water
* 2 cups semisweet chocolate chips

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, mix together the cake and pudding mixes, sour cream, oil, beaten eggs and water. Stir in the chocolate chips and pour batter into well greased pans.
3. Bake for 50 to 55 minutes or until top is springy to the touch and a wooden toothpick inserted comes out clean. Cool cake thoroughly in pan at least an hour and a half, invert and remove from pan.


VERY EASY - but remember, this is a very chocolatey cake. Chocolate lovers only. It's very moist and not too sweet though, I hate cakes that are too sweet. crazy.gif


Some tips:
- I learned from watching Sandra Lee that if you refrigerate the cake first before you frost it, it makes it easier to frost. If you do it right away the flakes will come off too easily and mess up your untainted frosting hahah
- I didn't have those cake sculting things for the frosting so I just used the straight side from a knife
- Cut off the top to make it even for putting it on top of each other
- Use the bottom side of the cake from the pan to make it the top side of the cake (I hope this makes sense)

Suree biggrin.gif I saw this off of the foodnetwork channel and it looked so awesome It's orginally suppose to be Fudge Brownie Bites with Cherry Mousse but I substituted the maraschino cherries for fresh strawberries. Here it is! biggrin.gif

1 box traditional fudge brownie mix
1/2 cup olive / vegetable oil
1/4 cup water
2 large eggs
1 teaspoon vanilla extract
1 cup semisweet chocolate morsels
1 envelope unflavored gelatin
1/4 cup cold water
1/3 cup boiling water
2 cups heavy whipping cream
2/3 cup sugar
1/2 cup of chopped fresh strawberries
5 teaspoons of mashed strawberries (sugar maybe needed depending on your sweet tooth)

Preheat oven to 350 degrees F. Lightly grease a 15 by 10 pan.

In a large bowl, combine brownie mix, oil, water, eggs, and vanilla. Beat with a wooden spoon for 2 minutes. Stir in chocolate morsels. Pour batter into prepared pan. Bake 18 minutes; cool completely. Cut brownies using a 1 1/2-inch round cutter (I used a glass cup =X) Place on a serving tray; set aside.

In a small bowl, soften gelatin in 1/4 cup cold water, let stand 2 minutes. Add 1/3 cup boiling water, stirring until gelatin dissolves.

In a medium bowl, beat whipping cream with an electric mixer until foamy; gradually add sugar, beating until soft peaks form. Gently stir in gelatin mixture, strawberries, and strawberry juice. Cover and chill 2 hours.

To serve, pipe or spoon strawberry mousse onto prepared brownies. (add a fruit on it for cuteness! biggrin.gif)

my friend and i made these cakes for my friends two months ago... both of them are ice cream cakes. the first one is mocha almond fuge ice cream cake and the second one is a strawberry ice cream cake



the coating is chocolate ganache with a 1:1 ratio of semisweet chocolate to heavy cream, the cake is a chocolate cake mix, and dreyers mocha almond fudge




the outside is fondant, the cake is yellow cake mix and ice cream is dreyers strawberry ice cream ( oh yeah i also learned out the hard way that the fondant is going to "die" if you put it in the freezer >.<)

made three cakes for mother's day... 2 strawberry shortcake and one oreo ice-cream cake.. but dont have a picture of the ice-cream cake cause i gave that one away before i could snap a picture. sweatingbullets.gif
