Thanks a lot! I wanted to try something lighter than a cheese based Alfredo, and I remember Nigella Lawson did something similar on one of her cooking shows. I just poured the creme fraiche/egg yolk mixture into the pan when the shrimp were done (off the flame).

I can't wait for a party/someone's birthday so I can make and decorate some as gifts
(In the meantime, I'll "practice" D:)

I also made palmiers last night but they were all gone before I could take a photo

so at the end it's purely just creme fraiche and egg yolk? how long do you toss it around for?

maybe 10-15 seconds. doesn't take long. added lemon zest and a tiny bit of lemon juice before serving - am never going to use Alfredo sauce again
