When you are going to sign up with a carrier. Get a contract with a free phone like the razr. So now your SIM card is activated. Then buy the new Nokia phone, it should be unlocked but double check to make sure. Since it's GSM, once you get the phone put your SIM in the card slot. Wait a while, dunno how long it takes, and then it will work. Don't throw away the other phone, just keep it for backup in case you need to send the other phone in for repairs or whatever. You don't need to bring the Nokia 7370, or whatever, in the store and ask them to activate it because the only thing you need to activate is a SIM and you can do that by signing a contract with a free phone.
This will only work if the phone is unlocked.
